I liked this healthy recipe, and I tried it today, so I would recommend it for you all and share it with you
Ingredients (2 servings = 4 pieces)
- 300 g chicken breast
- 1 Eggplant
- 1 tomato
- 125 g low fat mozzarella
- fresh black pepper and salt
- optional: 1 teaspoon balsamic and a bit rocket /arugula
Directions:
- Pre-heat the oven to 180°C
- Rinse the eggplants. Cut them lengthwise into thin slices.
- Bake for 3 minutes on each side in a pan
- Cut the chicken breast into thin slices.
- Rinse the tomatoes. Cut the tomatoes and the low fat mozzarella into thin slices
- Put 4 slices of eggplant on a baking sheet. Put on each slice of eggplant, a slice of chicken, another slice of eggplant, a slice of tomato and a slice of mozzarella (layers).
- On every layers put some spices (I used fresh black pepper and a bit salt)
- Put in the oven for 20 – 25 minutes at 180°C
- Serve with a bit of balsamic and rocket on top (optional)

Carbohydrates: 7 g (sugar 2.5 g)
