Vegetarian Recipes for Christmas - Stuffed Chiles with Walnut Sauce

Vegetarian expert Mary Margaret Chappell demonstrates how to prepare make-ahead stuffed chiles for a holiday dinner.

 

Ingredients

  • 12 poblano chiles
  • Vegetable oil
  • 1 chopped onion
  • 2 pounds of chopped mushrooms
  • 7 cloves of minced garlic
  • 1 finely diced jalapeno
  • 20 oz of tomato puree
  • 1 cup of toasted pecans
  • Half a cup of raisins
  • Half a cup of chopped, dried mangos
  • 3 tablespoons of dried arregano
  • 2 teaspoons of dried thyme
  • Half a teaspon of dried cinnamon
  • 2 cups of low fat sour cream
  • 1 cup of chopped walnuts
  • Vegetarian wishishere sauce
  • Pomegranate seeds

Cooking Directions

  • Roast 12 poblano chiles on an ungreased baking sheet until the chiles are blackened on all sides (15-20 min). Put roasted chiles on a bowl and cover it with a dish towel. Cool for 30 min. After cooled, peel away the blackened skins and remove the seeds.
  • Heat 2 tablespoons of vegetable oil over medium heat. Add one chopped onion and sautee for 5-7 min. After onions are soft, add 2 pounds of chopped mushrooms, 5 cloves of minced garlic, and 1 finely diced jalapeno. Cook until mushrooms are brown and crispy (10 min).
  • After the mushrooms are cooked, add 20 oz of tomato puree, 1 cup of toasted pecans, half a cup of raisins, half a cup of chopped, dried mango, 3 tablespoons of dried arregano, 2 teaspoons of dried thyme and half a teaspoon of dried cinnamon. Stir. Simmer for 10 minutes over medium heat. Cool for 15 minutes.
  • Slit the chiles open and place the filling down the middle of the chiles. Close the chiles. Bake chiles for 30 minutes at 350 degrees.
  • For the walnut cream sauce, add 2 cups of loaw fat sour cream to a blender. Add 1 cup of chopped walnuts, 2 cloves of minced garlic and 1 tablespoon of vegetarian wishishere sauce. Blend.
  • Pour walnut cream sauce down the middle of the now baked stuffed chiles. Garnish with pomegranate seeds.
